Hearty Beef Chili with Jalapeño, Frito & Cheese Topping - A True Super Bowl Sunday Must-Have

A mouthwatering, hearty bowl of 'oh-my-goodness'...

Growing up, chili was one of my favorite dishes, hands-down. When my mom asked my younger brother and I what we wanted for dinner, my go-to's were spaghetti and chili (I know... so creative). I simply loved the classics! This recipe is a bit flexible... and by flexible, I mean I definitely change it up a bit each time. You'll see a few 'optional' ingredients noted, so I encourage you to play around with the recipe as well!

The Jalapeños and Fritos are optional, but highly recommended for a build-your-own chili bar at your Super Bowl gathering this year. Trust me, the toppings won't disappoint!

Tip: If you like spicy, I recommend dicing the jalapeños and adding to the chili when cooking.

THE RECIPE

Ingredients:

1 lb grass fed beef

1 medium yellow onion, diced

2 1/2 tablespoons chili powder

2 tablespoons ground cumin

1 tablespoon garlic powder

1 1/2 teaspoons salt

1/2 teaspoon ground black pepper

1/4 teaspoon ground cayenne pepper *optional

1 can (15oz) diced tomatoes

1 can (15oz) chili beans / pinto beans with chili sauce

1 can (15oz) black beans, drained & rinsed

1 can (8oz) tomato paste

1 can (8oz) green chilies *optional


Topping Options:

cheddar & monterey jack cheese

sliced jalapeños

Frito chips (great for dipping!)


Directions:

  1. On the stove-top, bring a medium-size pot to med-high heat with a drizzle of olive oil.

  2. Add diced onion, sauté for 3-4 minutes stirring occasionally.

  3. Add beef, break apart into pieces and cook 6-7 minutes until brown all over & cooked through.

  4. Lower heat to med-low. Add in seasonings: chili powder, cumin, garlic powder, salt, pepper & optional cayenne. Stir until well combined.

  5. Pour in diced tomatoes, chili beans (with sauce), black beans (drain and rinse), tomato paste & optional green chilies. Stir again to combine.

  6. *If too thick, add a splash of water until you reach your desired consistency.

  7. Bring to a boil, then lower heat and simmer, uncovered, for 20-25 minutes. Stir occasionally.

  8. Remove from heat. Let rest for 5-10 mins before serving.

  9. Set-out toppings for family/guests to add their own :)

Instead of Fritos, bake your favorite cornbread recipe! Chili and cornbread go together like bread & butter... :)
